At last.. here it is! My most requested recipe ever… I make many versions of this, but this is the original recipe.. better late than never?
Spiced Goji Brownies
50g dates
150ml just boiled water
100g ground almonds
50g sifted cocoa powder
1tbsp ground cinnamon
2tsp ground ginger
pinch unrefined salt
5tbsp melted coconut oil
1tsp vanilla extract
2-3tbsp maple syrup
50g shelled pistachios
50g goji berries
50g toasted sunflower seeds
100g dark chocolate, broken into pieces
Soak the dates in the just boiled water for at least 1 hour. Line a 15x22 cm / 6x9” baking dish with plastic wrap.
Mix together the ground almonds, cocoa powder, salt & spices in a large bowl.
Using a blender, blitz the dates & date soaking water, coconut oil, vanilla & 2 tablespoons maple syrup until smooth. Stir the wet ingredients into the dry ingredients, then add the nuts, seeds & berries.
Taste & add another tablespoon of maple syrup if you prefer them sweeter. Spoon the mixture into the baking dish & smooth over with a wet spatula. Chill in the fridge until set.
Remove from the dish & plastic wrap. Cut into about 8 brownies with a sharp knife.
Melt the chocolate in a heatproof bowl set over a bowl of boiling water. Using a spoon, drizzle the melted chocolate over the brownie squares & then leave to set. You can eat these fresh or freeze them for another time.. enjoy Xx
